Vindaloo Chicken



Ingredients needed:

1. 500 gm chicken

2. 4 tsp chicken curry powder

3. 1 onion, diced

4. 2 pcs curry leaves

5. 1 tomato, diced

6. 1 tbsp tomato sauce

7. ¾ cup water

8. salt to taste

9. pepper to taste

10. 1 stalk spring onion and coriander leaves, chopped

11. 2 tbsp cooking oil

Ingredients for marination:

1. 6 tablespoons vinegar

2. 1 tsp lemon juice

3. 1 tablespoon minced garlic

4. salt to taste

5. ½ tsp grinded black peppe

This is how it’s made:

1. First, put the chicken with vinegar, lemon juice, garlic, salt and pepper in a bowl. Mix well and marinate for several hours or overnight in the refrigerator.

2. After that, heat the oil in a pan and saute the onion until soft and fragrant.

3. Then add the curry leaves, tomato and curry powder. Fry until fragrant.

4. Next, add the marinated chicken, tomato sauce and water. Stir well and cook until the sauce thickens and the chicken is fully cooked.

5. Sprinkle with spring onions and coriander leaves on top and vindaloo chicken is ready to be served with rice or bread.
