Thosai | Indian Fermented Rice & Black Lentils Crepe



Ingredients for making the thosai are:

1) 1 cup rice grain (soaked for 8 hours)

2) 1 cup aluthu (soaked 8 hours)

3) 1 cup of cooked rice

4) 1 cup of water

5) Salt & sugar to taste

Ingredients needed to prepare Coconut Chutney or Coconut Sambal are:

1) 1 cup grated white coconut  

2) 1 tbsp tamarind juice

3) Salt to taste

4) 3 green chilies

5) 3 bird’s eye chilies

6) 2 pc curry leaves

7) 1 inch ginger

8) 1 clove garlic 

 9) 3 cloves of shallots

The sautéed ingredients are: 

1) 1 curry leaves

2) 3 dried chilies

3) 1 tsp mustard seeds

4) 1 tsp uluthuparpu

5) 3 tbsp cooking oil for writing

To prepare the Coconut Chutney or Coconut Sambal.

First heat a bit of oil in a pan, add mustard seeds, curry leaves, uluthu parpu and dried chilies and Sautee until fragrant. Set aside for a while.

Then, add green chillies, bird’s eye chillies, shallots, garlic, ginger, curry leaves, tamarind juice, grated white coconut and a bit of salt into the blender. 

Blend until smooth. Then mix it with the earlier sautéed ingredients. Set it aside.

Ingredients for making Mint Yogurt are:

1) 5 pc bird’s eye chilies

2) 1 tsp mustard seeds

3) A bit of lime juice

4) Salt & sugar to taste

5) 1 cup yogurt

6) A handful of mint leaves

7) 3 pcs coriander leaves

To prepare the yogurt mint, add mint leaves, coriander leaves, yogurt, mustard seeds, bird’s eye chilies, lime juice, salt and sugar into a blender. Blend until smooth and set aside.

To prepare Thosai, first blend the rice grains in a blender until smooth.

Then enter aluthu, blended rice grains, cooked rice, salt and sugar with a bit of water into a blender. Blend until smooth and marinate for 8 hours.

Next, heat the pan, put a bit of dough and flatten it until it’s thin. Wait until it’s cooked and crispy and then fold it into two and now can be lifted. Thosai is now ready to be enjoyed with coconut chutney and mint yogurt.
