Steamed Fruit Cake

Ingredients:

  • 500g butter
  • 225g caster sugar
  • 500g all-purpose flour
  • 250g mixed fruits
  • 250g black raisin
  • 125g green cherry
  • 125g red cherry
  • 6 eggs (grade B)
  • 1 tbsp bicarbonate of soda
  • 1 ½ orange emulco
  • 1 tsp vanilla essence

 

To Make Caramel: 

Cook 225g caster sugar on medium heat until large bubbles appear on top of caramel layer

 

Method:

  1. Cream the butter and caster sugar until light and fluffy, using maximum speed.
  2. After that, add bicarbonate of soda and cream of tartar into the butter-sugar mixture and beat until well combined.
  3. Add eggs and beat until the eggs blend together with the mixture.
  4. Add orange emulco into the batter and combine well.
  5. Add flour, mixed fruits, black raisin, green cherry and red cherry that has been mixed together beforehand. This is to prevent the fruits to sink to the bottom.
  6. Lastly, slowly add the caramel using low speed and let them combine well.
  7. Add vanilla essence into the batter.
  8. Pour the batter into a baking tin that has been greased with butter and lined with parchment paper.
  9. Steam for 4 hours and 15 minutes until cooked. Use high heat during the first 2 hours, and medium heat for another 2 hours and 15 minutes. Check the steamer every 30 minutes to wipe any excessive water vapour that might drip on the cake.
