Ingredients:
- 500g butter
- 225g caster sugar
- 500g all-purpose flour
- 250g mixed fruits
- 250g black raisin
- 125g green cherry
- 125g red cherry
- 6 eggs (grade B)
- 1 tbsp bicarbonate of soda
- 1 ½ orange emulco
- 1 tsp vanilla essence
To Make Caramel:
Cook 225g caster sugar on medium heat until large bubbles appear on top of caramel layer
Method:
- Cream the butter and caster sugar until light and fluffy, using maximum speed.
- After that, add bicarbonate of soda and cream of tartar into the butter-sugar mixture and beat until well combined.
- Add eggs and beat until the eggs blend together with the mixture.
- Add orange emulco into the batter and combine well.
- Add flour, mixed fruits, black raisin, green cherry and red cherry that has been mixed together beforehand. This is to prevent the fruits to sink to the bottom.
- Lastly, slowly add the caramel using low speed and let them combine well.
- Add vanilla essence into the batter.
- Pour the batter into a baking tin that has been greased with butter and lined with parchment paper.
- Steam for 4 hours and 15 minutes until cooked. Use high heat during the first 2 hours, and medium heat for another 2 hours and 15 minutes. Check the steamer every 30 minutes to wipe any excessive water vapour that might drip on the cake.
