Pandan Chicken or Fried Chicken Wrapped with Screwpine Leaves
Here is a recipe for making PANDAN CHICKEN
Ingredients needed :
½ chicken3 clove of garlics3 shallots½ inch of ginger½ inch turmeric½ inch galangal2 stalk of lemongrass1 tsp of coriander1 tsp of fennel seed15 birds eye chilliesSalt and sugar to tasteScrew pine leaves
Here is how its prepared :

First mashed shallots, garlics, ginger, turmeric, galangal, lemongrass, coriander, fennel seeds and bird eye chillies into a mortar and pestle.

Then add chicken and mix well. Season with salts and sugar. Optional to add coconut milk or honey.

After that, make a pocket of screw pine leaves then add chicken. Pack neatly as u pack ketupat. Cut the extra leaves and skewed with sticks to make it easier while frying.

After finishes packed all the chickens, fry into a hot oil and fry until it turns golden brown. Remove and drain the oil.

Pandan chickens are ready to be served.
